Tropical Muffins *Pinterest Recipe*


Hey Loves,

Pinterest inspired me again :) this time I made Tropical Muffins! Pintrest is a place where I can get any recipe! A little over a month ago, while grabbing my lunch I stumbled upon pineapple coconut muffins. Yum right? but almost $4 for muffin was no no form me. I can make at least a dozen with that price! After getting back to work I look on Pintrest for Pineapple Coconut muffins. i found few but Tropical Breakfast  Muffins by A Spicy Perspective stood out the most. Why? Coz not only it contain pineapple and coconut but it does also my beloved mango :) 



Most of the ingredients I had already at home, I was missing only mango and shredded coconut. 
After getting everything, screwing up recipe (yeah it did happen). LOl let me tell you. I had only 1 cup of sugar, and instead of mixing sugar with butter like recipe say, I mixed it with flour! Yes silly me! I had to go out again. 
My husband, who don't eat anything sweet ate like 6 of them! 



Yum! guys they are so good! not crazy sweet.

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 cup unsalted butter, softened (2 sticks)
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 15 ounce can crushed pineapple
  • 3/4 cup diced fresh mango
  • 1 1/4 cup shredded coconut, divided

  1. Preheat the oven to 325 degrees F. Line two large muffins tins with paper muffin liners. Mix the flour, baking powder, and salt in a small bowl.
  2. In the bowl of the electric mixer, cream the softened butter and sugar. Beat until light and fluffy, about 3-5 minutes. Scrape the bowl, then turn the mixer on low and add the eggs, vanilla and flour mixture. Scrape the bowl again and add the crushed pineapple, diced mango, and 3/4 cup shredded coconut. Mix until smooth.
  3. Divide the batter evenly between 24 muffins liners. Then sprinkle the remaining shredded coconut over the muffin batter. Place the muffin tins in the oven and bake for approximately 25 minutes. Insert a toothpick in the center of a muffin. If it comes out clean, remove the muffins from the oven. Cool for at least 5 minutes in the muffin tins, then flip the muffins out of the pans.


Apple Coffee Cake Muffins *Pinterest Recipe*

I have to tell you I have a huge amount of apples at home. Ask me why? We love apples, Sophia eats them by tons :) But with a this large amount I decided to bake some apple goodies :)
After browsing Pinterest I found great recipe I had to give a try. 
I love Pinterest :) Unfortunately my previous profile was removed .. long story on that. So I made new one and just keep pinning. I pin recipes the most :) You can check my Pinterest page by clicking in my profile Pin Icon :)


So I found the recipe that come from Sweet Peas and Saffron blog. 
OMG the muffins are so delish! And so easy to make too! you guys need to try them. I made 12 muffins on Monday and they disappear within minutes ! I had to bake more on Tuesday. When they bake the house smells so good! That's what I love about baking the smell of the goodness in the oven. 

The muffins itself are so good. Yeah I know I keep repeating myself but I cant help it . I love it. They came not super sweet but sweet. With sugary cinnamon crumble and swirl yum!

Ingredients
Apple Coffee Cake Muffins
  • 2 cups all purpose flour {250g; spooned, fluffed & levelled}
  • 3 tsp baking powder
  • ½ tsp salt
  • ¾ cup packed brown sugar {165g}
  • 1 large egg
  • 1 cup milk {buttermilk recommended but any milk works}
  • ¼ cup vegetable oil
  • 2 cups of apples, peeled and diced into 1 cm pieces
Cinnamon Sugar Swirl
  • ¼ cup packed brown sugar {55g}
  • 1½ tsp ground cinnamon
Crumble Topping
  • 2 tbsp cold butter, cut into pieces {28g}
  • ¼ cup packed brown sugar {55g}
  • ¼ cup all purpose flour {32g}
  • ¼ tsp ground cinnamon
Instructions
Cinnamon Sugar Swirl
  1. Combine ingredients in a bowl and set aside.
Crumble Topping
  1. Combine brown sugar, flour and cinnamon in a medium bowl. Cut the butter in using a pastry tool. Mix until coarse and crumbly {see photos above}. Set aside.
Muffins
  1. Pre-heat oven to 400°F. Line a standard-sized muffin pan with large muffin papers and set aside.
  2. In a large bowl, combine the flour, baking powder, salt and brown sugar.
  3. In a separate bowl, beat egg, and add in the milk and vegetable oil. Mix the wet ingredients into the dry with a spoon, mixing until just combined. Do not overmix!
  4. Fold in the apples.
  5. Spoon 1 tablespoon of muffin batter into the bottom of each muffin paper. Add a teaspoon of cinnamon sugar mixture, then top with remaining batter until the well is completely full. Spread a heaping spoonful of the crumble topping on top.
  6. Bake for 18-22 minutes, until a toothpick comes out clean.

My first time baking pumpkin muffins and I know I will be baking them again
I found this recipe via Pinterest and I fell in love. The muffins came out so delicious! 
I added few ingredient to the recipe though. 
Tomorrow or Tuesday I will be baking cookies! OMG I just cant wait ! My mouth waters already :)

Note to European Girls :
If you want to make this muffins the measuring is slightly different. We use special Measuring cups and in Poland when ever I baked I used Glass to measure all my ingredients

* 5 cups of oats (The old fashioned ones)
* 1 can (15oz) pumpkin puree
* 1 cup applesauce
* 4 eggs
* 2 bananas ripe
 * 1 tsp vanilla extract
* 1 cup of sugar ( even though she only put 3/4)
* 1 tbs ground cinnamon
* 3 tsp baking powder
* 1 tsp baking soda
* 1/2 tsp salt
* 1/2 cup dried cranberries 

My extra ingredient:
* 1 tsp pumpkin spice 
1 cup white chocolate chips 

Mix all dry ingredients together. All wet together in separate  bowl. Transfer all wet ingredients to dry ingredient and mix it well. Add chocolate chips and cranberries . Scoop in muffin liners and bake for 22 min. At 400F. 
Makes 24pcs.
